The house

A room built for
long evenings

Ambre opened in a former banking hall in 2009 with thirty-eight seats, tall arched windows and a refusal to rush anyone. Chef Élise Marchand cooks the food of the season and the coast — precise, warm, and never theatrical for its own sake.

The dining room is pale oak, travertine and ivory linen under soft gold light, and the same maître d' has greeted guests since the first service. We keep the room quiet, the pacing generous, and the last table as important as the first.
